Chicken and Waffles

There's something about the combination of sweet and salty that I absolutely love. Kettle Corn, popcorn with peanut M&Ms (not plain, it has to be peanut) and chicken and waffles are just to name a few. Some people can't understand the flavour together but just think, the saltiness of the crispy chicken, the sweetness of the waffle and the maple syrup poured all over makes for such a delicious meal. Just writing about it makes me drool.....yum!

I used a whole chicken and cut it into pieces. This way there is the dark and white meat for everyone's preference.

This crumb coating is my trick to getting "fried" chicken which is actually baked in the oven!

The chicken is marinated overnight in a buttermilk marinade.

Off to the oven!

Dry ingredients for the waffles.

Wet ingredients for the waffles.

Mixing the wet ingredients into the dry.

Whisk the egg whites separately.

Whisk until soft peaks form.

Fold egg whites into waffle mixture.

Recipe

Season chicken in a bowl with dry ingredients. Pour buttermilk and lemon juice. Marinade in refridgerator for 6 hours or overnight.

  • 1 whole chicken, cut to pieces

  • 1/2 teaspoon salt

  • 1/2 teaspoon paprika

  • 1/4 teaspoon garlic powder

  • Pepper to taste

  • 1 cup buttermilk

  • Juice of 1/2 lemon

Crumb Coating - add all ingredients to a bowl, set aside.

  • 2/3 cup Japanese panko crumbs

  • 1/2 cup cornflake crumbs

  • 1 1/2 salt

  • 1 teaspoon dried parsley flakes

  • 1 1/2 teaspoon paprika

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon child powder, more if you like a bit more kick!

Directions:

Preheat oven to 400F. Line baking sheet with parchment paper. Remove chicken from buttermilk and dredge each piece in the crumb mixture and place on baking sheet. Lightly spray with olive oil before placing in the oven for 40-45 minutes.

Waffles

  • 3/4 cup all-purpose flour

  • 1/4 cornstarch

  • 1/2 teaspoon salt

  • 1/2 teaspoon baking powder

  • 3/4 cup buttermilk

  • 1/4 cup milk

  • 6 tablespoons vegetable oil

  • 1 egg, seperated

  • 1 tablespoon sugar

  • 1/2 traspoon vanilla extract

Directions:

Heat waffle maker. Mix all the dry ingredients into a bowl (except the sugar). In another bowl or measuring cup, mix all the wet ingredients (except the vanilla and egg whites). Set aside.

Beat the egg whites with a hand blender in a separate bowl till soft peaks form then add in the sugar and vanilla extract. Blend again until mixed.

Pour the wet ingredient mixture slowly into the dry ingredients using a whisk to mix slowly until combined.

Add the egg white mixture and fold in just until incorporated. Do not over mix.

Place batter into waffle maker and cook accordingly.

Place a piece of chicken on top of a warm waffle, drizzle with maple syrup and enjoy! My son loves chicken and waffles so this was the perfect lunch for us to celebrate Canada's 150th Birthday!
