Easy Peach Pie

I love summer when there is a variety of fruit other than apples and oranges. My favourite are peaches. Fresh Ontario peaches are juicy and sweet and perfect for this easy peach pie recipe I received from a friend a while back.

Recipe

  • 1 to 1 1/2 large peach, sliced

  • 2 eggs

  • 1 cup sugar

  • 1/4 cup flour

  • 1/4 teaspoon salt

  • 1 cup table cream

  • 1 teaspoon vanilla extract

Directions:

Thaw a 9" ready made or homemade pie crust. Layer sliced peaches in the pie shell.

In a bowl, beat eggs lightly. Mix in sugar, flour and salt. Stir in cream and vanilla.

Pour over peaches and bake in preheated 375F oven for 1 hour or until stick inserted in the centre comes out clean. Cover pie edges to prevent burning if necessary.
